When I need a dessert in a hurry, this best fudge brownie skillet pie always wins out. Because: CHOCOLATE!
One of my favorite desserts is brownies. Well, anything chocolate, really. Chocolate crinkle cookies, chocolate cake, chocolate cream pie, chocolate cream puffs. The list goes on.

Keeping It Healthier
One way I can keep my desserts a little healthier is by keeping the sugars to unrefined and as natural as possible: sucanat, honey, or maple syrup. And that’s only if I want to make a dessert that uses sugar. Sometimes I’ll make it trim healthy by using monk fruit and stevia instead, which keeps it completely sugar free. Also, using an ancient grain like einkorn is better for our digestive system if I choose to make something without sourdough, or again, keeping it trim healthy and low carb by using almond and coconut flours instead.
However, the mood strikes when it wills, it seams. And my sourdough starter comes to the rescue a lot! In the future I plan to share a sourdough version of this recipe. But for now you can check out the other ways I love to use my sourdough starter on the fly.

BEST Fudge Brownie Skillet Pie Recipe
Equipment
Ingredients
- 3/4 cup unsalted butter, melted over low heat in skillet
- 1 cup sucanat sugar; turbinado and coconut sugars can be subbed
- 1/3 cup einkorn flour; I use freshly ground einkorn berries
- 1/8 teaspoon salt
- 1/3 cup cocoa
- 1/2 TBS vanilla extract
- 3 large eggs
Directions
- Preheat oven to 350º F
- Over low heat, melt butter in your cast iron skillet
- Remove skillet from burner and add all the dry ingredients, then add the eggs last
- With a wooden spoon, stir to combine
- Bake for 20-30 min, watching for middle to be set. We’re looking for a fudgy consistency. Don’t overbake.
- Allow to cool 10 min before serving. Enjoy!
That’s it! I mean, how easy was that? I love it when I can mix everything in the same vessel that it’s baked in — less cleanup! And THAT makes this from-scratch mama sing and dance. And probably my children, too, since they have dish duties.

Mmm… I love how simple this recipe looks and can’t wait to try it. I just started using einkorn this year and I’m obsessed! It’s such a hot grain that you should totally make another pin marketing these as an einkorn brownie skillet ^_<
