Simple Sourdough Skillet Pancake for Easy Weeknight Dinner

Here’s a simple sourdough skillet pancake that’s easy and quick to make for a weeknight dinner.  Paired with a frugal egg bake and served with a side of roasted veggies, you have what our family calls “Brinner” (breakfast for dinner).

Here in our little farmhouse corner of the world, we like to have “brinner” (breakfast for dinner) every Wednesday night.  It comes right at the middle of our busy week and gives a little comfort to our bellies and warmth to our table.

I love to serve simple, traditionally prepared foods to my family, knowing that they are providing nutritious and gut-healthy sustenance.  These sourdough prepared skillet pancakes are just that, and they serve up quick and easy.  That’s my kinda night right there – BAM!

Usually when I think pancakes, I think Saturday mornings.  Standing over the stove and griddle.  Pouring yet another round of dallups of batter.  Staring into the pools of circles.  Or hearts, because I’m bored with circles.  Waiting for the coveted bubbles to appear, signaling the time to flip.  Only to wait once more.  Sigh.

All dramatics aside, I actually do enjoy that.  On a Saturday morning.  Not for dinner in the middle of our busy week.  Thus, the simple sourdough skillet pancake to the rescue!  With one pour of all the batter into a preheated, cast iron skillet *swoon*, I’m able to whip up some kind of protein to serve alongside.  It’s usually an egg/spinach/mushroom/onion bake since my oven is already on to finish off the skillet pancake.  And perhaps a veggie side, too. Because the oven’s on anyway, and well … who doesn’t like roasted veggies?  My kids prefer them!

How to keep sourdough pancakes simple

  1. Keep your sourdough starter fed with enough to use when the mood suddenly strikes
  2. Store your fed sourdough starter in the fridge until ready to use
  3. Preheat a cast iron skillet while mixing up the batter
  4. Use what you have on hand to mix it up a little.  Is it fall? Add some apples or pumpkin.  Spring? Blueberries or raspberries.  Spice it up with cinnamon or pumpkin spice.  Plain ‘ol batter with some vanilla is just fine, too.  Or maybe you want to go with a savory theme: chives? garlic cheddar? sweet potato?  Okay, now I’m just hungry.

What to serve with simple sourdough skillet pancakes

I always try to serve a well-rounded meal: protein, veggies, carb.  The sourdough skillet pancake covers the carb.  For protein, I find that the easiest and most frugal is eggs.  Because I’m all about simple, throwing together an egg dish to bake in the oven makes sense to me.  Omelettes? Sure!  Just scramble up the eggs, throw in some spinach, cheese, mushrooms, and onions, salt and pepper.  Then pour it all in a casserole dish to bake.  Voila!  Omelettes that you don’t have to make individually. 😉  For the veggies, I like to roast up whatever I may have: carrots, broccoli, brussels, etc.

Simple Sourdough Skillet Pancakes Recipe

You will need:

2 to 3 cups (for my family of 5 I use 3) fed sourdough starter (doesn’t need to be bubbly; can be straight from fridge).  Learn more about this HERE

Milk of choice to thin out sourdough starter to pancake consistency, if needed

2 eggs

1/3 cup melted coconut oil (or grass-fed butter), plus 1 tbl for the skillet

1 tsp himalayan salt (or sea salt)

2 tsp baking powder

sweetener of choice and to taste (I use a tablespoon of maple syrup or honey, or stevia to taste)

Optional add-ins: 2 tsp homemade vanilla extract, 2 tsp cinnamon, 2 tsp pumpkin spice, a few handfuls of chopped chives, 1 cup pumpkin puree, 2 apples chopped, etc.

Simple Sourdough Skillet Pancakes Instructions

  1. Preheat oven to 375 F on the BROIL setting, or LOW BROIL, and a 10 or 12 inch cast iron skillet on the stove top on MEDIUM-LOW with 1 TBL oil of choice.
  2. Whisk all ingredients together and choice of optional add-ins (fold in bulky items like apples or chives after ingredients are mixed well).
  3. Once skillet is preheated, pour in batter and turn heat down to LOW
  4. Cook on stove top for a good 7-10 min and pancake has set up completely with air bubbles all over the surface
  5. Once surface is mostly covered in air bubbles, place skillet in oven on middle rack and broil for 3-5 min, keeping a close eye on the pancake so it doesn’t burn. (I’m a seasoned expert at this. The burning part.)  Cook until done in the center, or a toothpick comes out clean.
  6. Slide the pancake out from skillet onto a cutting board with the aid of a metal spatula.
  7. I use a pizza cutter to slice the round into 8 servings.
