Oh how I love comfort food. There’s something about a warm kitchen, with smells of deliciousness that wafts through the entire house. Sometimes it even spills into the outdoors, calling in those who are chilled from stacking the firewood and need to be warmed up with some good nourishment. Baked in a cast iron skillet, this simple au gratin potatoes from scratch skillet recipe is just what the weather ordered.

Au Gratin Potatoes From Scratch Recipe
The Ingredients
Whole foods are important to me. I want to nourish my family with foods from scratch that are fresh and wholesome.
Keeping it simple also means it’s probably healthier.
I love using my cast iron every chance I get. For this dish I use a 10-inch dutch skillet (dutch meaning it’s a deep dish, where the sides are higher than a regular skillet).
You will need:
- 5-6 potatoes — I used medium-sized red potatoes, washed and scrubbed
- 1 ham steak, cubed, optional
- 4 oz. (or half a tub) cream cheese, softened — I like to use the organic whipped kind from Trader Joe’s as it doesn’t need softened
- 1/2 cup milk of choice — sometimes I may only have cashew milk on hand
- 1/4 cup heavy whipping cream
- 1/2 cup plain yogurt — I use my thick, homemade yogurt
- 1 cup total shredded cheese — you can use Italian blends, parmesan, cheddar; I usually keep it simple with my beloved Kerrygold grass-fed cheddar I purchase in bulk from Costco
- 1 TBL chopped, fresh rosemary, or 1 tsp. dried
- 1/2 tsp onion powder
- 2 – 3 cloves of garlic, minced
- Salt & freshly ground pepper, to taste
The Directions
Preheat the oven to 400º F.
Place cream cheese, milk, cream, yogurt, and all spices into a mixing bowl and whisk to combine.
Thinly slice the washed potatoes. I like to use my food processor for this.
Grease bottom and up the sides of your skillet. I used bacon grease.
Place a layer of potatoes down. Add a layer of ham. Pour 1/3 of the wet mixture over the top. Sprinkle cheese. Repeat for a total of 3 layers, or until all ingredients are used.
Bake covered for 30 minutes. My skillet was second hand and didn’t have a lid so I used foil.
After 30 minutes, uncover and bake an additional 15-30 minutes until brown and bubbly.
Serve immediately and enjoy!
