Combine all dry ingredients and mix thoroughly.
Add wet ingredients and mix well. If the mixture seems a little dry, add water 1/2 cup at a time until all the oats are thoroughly moistened. You want them wet enough to get the soaking action happening, but it’s not necessary to have them sloppy. If you add too much water, no worries. It just means more dehydrating time. 😉
Cover granola with a tea towel and let set for at least 6 hours, or overnight.
After the soaking time, spread granola out on dehydrator sheets, or on a rimmed cookie sheet for the oven.
Dehydrate at 125º F 6 to 8 hours, or on the lowest setting of your oven until dry. This will depend on how moist your granola is. If using the oven, check every 45 min and stir to prevent burning. I try to time my granola making to dehydrate first thing in the morning or overnight. Hands-free, hassle-free cooking!
Cool granola completely before storing in containers. I like to use glass jars like this one with these lids.
